Your Fuyo is twice as large and twice as high as mine and I don't even prune them heightwise.
There must have a dwarf and standard varieties.
And it seemed like they are alternate year fruiters.

Benny, mine has be in the ground a long time, maybe 35 years, and is definitely an alternate bearer.

I have a native persimmon that I cut down last year, but it has a couple shoots that have sprouted up. With all the pictures of persimmons on this thread, I am now considering trying to graft it.

What varieties would be good for this area? When is the best time to graft and what is the best method to use on persimmon?

Skeet, this is the best method for me on persimmons:

Read on near the last 4 pages, I have a tip on persimmon as to when, and in fact I have grafted 18 cultivars this year using the technique, and all of them grew, and 12 of them bear full sized fruits that I have already enjoyed this same year.

Be sure to apply fertilizer that contains Mn so that your persimmon grafts will easily unite.

For non-astringent varieties you can use:
Fuyu
Giant Fuyu or Hana Fuyu or Gosho
Ichikikeijiro
Izu
Jiro
Matsumoto
Sharon
Suruga
