I have your wine on a chiller until an opportune time that we could meet. It is still illegal to ship wine through the mail if you are not a certified licensed winery. But it can be carried by mature people. So if someone from CA is going your way, just inform me and I will send it through. When it is in a wine chiller, it doesn't age that much anymore and it won't degrade in quality. The taste is now is at its peak, any later would degrade the quality, so it should be kept in the chiller, waiting for you.
I can just dream of your wines too! I hope I get to taste it one of these days.
So far, my American Ginseng Mead of vintage 2004 has finally mellowed down and have fantastic subtle aroma. It is probably the most expensive wine I ever made. It is made from the roots of American Ginseng (which costs about $200 per lb) and wild honey, thus, it is a Mead drink. I filtered it and bottled it last night, after 3 years of batch aging. It is a tonic or an elixir but is not good for those taking blood thinning agents like warfarin. It can act as a stimulant for those lucky honeymooners!
I have made about 400 bottles of assorted fruit wines this year, with still 100 bottes to go, but will postpone that for next year. Already I made 3 batches of pomegranate wine when the fruits went on sale. |

SusanB, I didn't know you were part Czech. Our grandparents were practically neighbors! My Dad's parents grew up 20 miles away from @ other in Yugoslavia (Slovania) & met in Minnesota & married.
Wishing Petr & everyone a very happy GREEN, YELLOW & ORANGE (& RED) Holiday Season (although it's pretty white here now).
