Joe, Should I cut the scions from the Izu section of my tree now and store them as winter wood or would it be better to cut them at the time of grafting?

Cut them now and store. I think there is enough pre-spring inertia to worry about any self-pruning of the persimmon trees. Graft when the destination is pushing out leaves.
