It's all preference. I think the Meyer with a hint of Mandarin scent and flavor is better for lemon pies and lemonade.

For vinaigrette salad dressing, the high acidity of Eureka is more appropriate (although you can just use more Meyer).

Be aware that you will have to significantly increase they lemon juice in your pie recipe if it is based on Eureka.

I think, one way how to resolve this dilemma is just, buy one and graft second variety in to the treetop.
And you can keep both.

this is what i have done, i also have lime on the tree.

for me, as a child there was a meyer growing in our yard so when i think of lemons i think of meyers.
