i just saw this on a little public tv cooking show and had to share. I'll be making thiss on the weekend for a few friends that are coming over
4 lemons, cut in half, reserve juice.
1 cup minced basil
1/4 cup finly chopped pine nuts
6 cloves garlic finly chopped
1/3 grated parmesan cheese
1/c olive oil
1 cup grated mozzarella cheese
cut lemons in half, scrape out most of the pulp, reserve juices. but a tiny portion of the bottom of each lemon half so it stands up easily w/o rolling over
mix together basil, pine nuts, garlic, parmasean and oilive oil, fill lemons with mixture. top with mozza cheese. bake in the oven for 30 minuts at 300 degrees
On the show, they ate the entire lemon, cutting and placing it on crusty bread slices. it really is basically a pesto stuffed lemon with mozza cheese to top. I can;t wait to try
