I just got new apple and Asian pear trees. Isn't now a good time to prune? If I do prune, is it also a good time to graft as well?

In a nut shell, what are the pruning and grafting guidelines for apples and pears and peaches for that matter, this time of year? Maybe we can make this a "sticky" post.
