I recently received a 57 page Cook Book. The 57 pages of recipes in the book makes just ONE NIGHT'S DINER. The book is titled "Citrus In Eight Courses". I purchased the first copy directly from the author, who is a word class chief. Throughout the book the full color photos are simply fantastic, showing pictures of every ingredient used, plus a picture of the finished plate for each course. What is unique about this cook book is that each of the eight courses is based on a different citrus variety. Each variety was chosen for their unique aroma and the acidic balance that they would lend to each dish.
1st course: - Limequat soup and salad with Artichoke.
2nd course: - Kieffer Lime tempura oyster on a bed of green curry and avocado puree .
3rd course: - Carrot Mandarinquat celebrating carrots in six distinct preparations.
4th course: - Chicken liver parfait wrapped in a blood orange gel and served with gingerbread crumbs.
5th course: -Rangpur Lime Cod, that has been salted to intensify its texture and flavor, paired with bright lberian flavors.
6th course: - Meyer Lemon Veal, featuring pan seared sweetbreads and slow cooked veal tenderloin.
7th Course: - Is the first of two sweet courses. Harmonious Japanese flavors are featured in the components: black sesame panna cotta, Yuzu gelee with sour cherry granita and almond espuma.
8th course: -The final course pairs Chocolate Bergamot, in a variety of textures and temperatures, with pear, chestnut and bay as supporting flavors The photo of this course is awe inspiring.
