it's only one leaf out of the 5 or so it has. Any chance that graft will become all variegated or is it just this leaf?

Cara Cara is known to produce the occassional variegated shoot.
I believe that if you propagate from such a shoot you will increase the likleyhood of ending up with a more variegated plant.

Yes, this seems to be a true variegation.
We can see the pale line on the stem. Every shoot coming out of this line has good chances to be variegated.
