A friend gave me about 15 gallons of meyer lemon fruit. What to do? I drank as much lemonade sweetened with equal as I could and I made preserved moroccan lemons with the rest of them:
Fill the jar with quartered meyer lemons and meyer lemon juice. Add a couple tablespoons salt. Keeps indefinitely. After sitting a week or so I de-seeded and pureed some of the fruit. Best to store in a jar without metal. They don't need refrigeration although I have been keeping the puree in the refrigerator.
I use the puree in savory foods like salad dressing and seafood dishes like New Orleans BBQ shrimp.
