				| One thing to note about kumquats when using them for marmalades is that you can use everything except for the seeds. The basic procedure would just be to cut the fruits, collect the juice, strain it to remove the seeds, put the juice and peels together and run through a blender. That will be the main ingredient to use in making marmalade by itself. It makes really nice looking orange colored jelly. You can reduce the sugar usage also as the rinds are naturally sweet.  |  |

				| Use the recipe for orange marmalade on the pectin box.  Last year I found out if I chopped about 1/4 of them fine in a food processor, pectin really wasn't needed. You can use the amount of sugar called for on the pectin box and just boil a few minutes.  Personally I use Pomona pectin bought by the pound. It goes a lot further in that there is no added sugar in this pectin. My favorite marmalade is changshou kumquat.  |  |
