JEAN'S Kumquat Refrigerator Pie

1 baked pie crust, 9 " or graham cracker crust

1 (8 oz.) Cool Whip whipped topping- FRENCH VANILLA(lite works fine too)

1cup pureed Kumquats
place seeded kumquats in the blender with the smallest amount of water or orange juice needed to puree them. ( I used about 1/3 cup oj to do a blender full. Then you can freeze a pack or two of the puree to have on hand for the next pie.)

1 can condensed milk(fat free works fine too)

1/2 cup lemon juice

Blend condensed milk and whipped topping together. Add lemon juice and beat until thickened. Add pureed kumquats, pour in pie shell and chill in refrigerator for several hours before serving. top with whip cream or cool whip before serving. Delicious Wink

I should have just enough dead ripe Meiwas to give this a try this coming weekend. Never had a lot of use for kumquats, but this sounds pretty good. Thanks for posting the recipe.

Thanks for the note. I used a graham cracker crust, don't know why I put baked pie shell, but either would work.

I think you will love the pie.
