I've read a lot of instructions about collecting Apple scion in the late winter such as Jan-Feb and store teh scion in the fridge until grafting in the beginning of Spring such as March. However, I am unable to collect the scion during these month.

How successful would it be for immediate apple graft. Such as the summer month. I can collect pencil size scion and immediately graft to growing apple trees. Will the scion be desicated by the fall or will the graft catch but the resulting scion die off during the subsequent winter months.

The only other option is to collect teh scion mid October and store until the subsequent March. However most online forum suggests storage of scion is viable for up to 3 months, so 5 month is pushing it a bit. Also, most place suggests storign the scion at slightly above 32F. However the fridge i have available is set at 37, any colder and the fruits/veggies get frost. Will the budstick survive such long storage?

I did come across one post online which one guy said he had success storing scion from October up until August and still have success. However, it is unclear what zone is is located in so the success might be due to his strange climate.

You can do bud grafting in the summer when the bark peels away easily. It is the easiest grafting--especially on apples--that there is.

I only tried it once, grafting a neighbor's Macintosh (nice red tinted flesh and good flavor) onto my tree. The grafts lasted a few years, then died. I probably made a poor choice in branch.

Apparently the method works for figs, too.

If I was trying to graft late/off season, I would use Buddytape or similar to seal the scion against desication, also possibly defoiate the scion on the tree a couple of weeks before collection. This may prime the buds on the stick to flush after grafting.
Budding is also a good option as mentioned.
