My Papaya trees (3) are really fruiting. I cannot keep up with the fruit, and my sons are getting tired of eating the fruits, and don't want any more. The average fruit is 3 pounds. Benny, the mini Papaya that we were talking about last year that fruits at one foot high is now producing fruit. Actually that tree begin fruiting at 3 feet and produces fruit about the size of a soft ball. It is still about 3 feet tall. - Millet

Millet, you could try this method of enjoying papaya:

open up ripe papaya, remove seeds, slice them into longitudinal sections, shower with Calamondin juice, cover with saran wrap, chill in the fridge and then serve.

One thing that Papaya fruit lacks is the acidity. They are sweet but insipid. Pressing the yellow-green skinned Calamondin juice over them will attain a superb balance that most of us like in fruits.

We also eat it with soft cheese...

How is the flavor of the smaller one??
If I lived a little closer I'd help relieve you of some of that excess.. Wink
Do they have a farmers market you could sell some at??
The Farmers market here in town is very small.. but is open Wed, Friday and Saturday.. IF I ever get excess harvest of any thing I will take there.. But Kids don't allow too much Excess of anything here..
Maybe Papaya jams?? wine???

Papaya don't make good wines but it can be done to make good wines. Just add a lot of tartaric, malic and citric acid to achieve balance.

My mother makes superb papaya candies, jelly and a lot of other goodies. But she would need the firm semi-ripe papaya, not the dead ripe mushy papaya.

Millet:
Congratulations on your papayas.
Lucky you!
Me, I am still dreaming growing papayas.
Last year, I bought the Tainung papaya seeds and waited for the spring to plant them but it disappeared. I could not find them. I'm still looking for it.
Meantime, I have good luck with my bananas. They are all growing nice planted on the ground.
I have 5 wine barrels prepared for them when the time comes for transplant.
My wife has a recipe for a ripe papayas.
Clean a cup of papaya add a cup of vanilla ice cream and a cup milk and a cup of ice. Put all in a blender and add a tbspn of honey.
Blend.
Viola- you have a papaya smoothy.
You can do this also on fresh strawberries or fresh mangoes.

Millet
I planted six papayas this spring , three each of the Tainung #1 & #2. Out of the 20 seeds fifteen germinated. From what you say about having too many fruit , I am happy that I gave my friends the other nine plants.
They are really growing now that the weather has heated up and they are approximately 2 ½’ tall. At what height should I expect to see fruit on this variety?
They are beautiful plants and I would plant them again even it they did not fruit.

This morning I took a trip down to Just Fruits and Exotics in Medart,FL and was amazed by the 'Red Lady' Papayas-they should be started in a greenhouse in the fall and planted outside in May to fruit well in our area- Here is a pic with the owner-Brandy Cowley-Gilbert
