Tried my first finger lime today. Probably variety 'collette' and given season from Queensland rather than california.
Not impressed, lot nicer than a lime or lemon. Lower acidity but more delicate flavour and interesting texture with little round vescules popping. Not something would go out of way fir eating out of hand.
On a raspberry panacotta, what a difference! The acidity, texture and flavour contrast really come to fore.
