When grafting plums, apricots, cherries, or pluots, the best is cleft grafting. Here's my pictorial demo:

For citruses, such as my 30-in-1 tree, I use T-budding on all of them. See picture number 39 of this link (when the citrus tree was still 25-in-1 last year):
