Does refrigeration of key limes affect the viability of the seeds? I ask this since apparently key limes are sensitive to temps below 40.

Key limes will take much below 40 without a problem. If you applied fungicide you shouldn't have a problem as long as the seed wasn't exposed to freezing temps.
