Sudachi Marmalade
You Need:
4 C. sliced fruit
1/8 t baking soda
1 ½ C water add water to make 4 ½ C. with fruit
1 box pectin mix

5 C. sugar
6 (8oz) half pint glass
6 Jar lids and bands
1. Prepare boiling water canner. Heat jars and lids in simmering water until ready for use.
2. Cut fruit in half and squeeze out excess juice and de-seed. Slice fruit into thin slices. Add water and fruit to pan and simmer for 10 min.
3. Add sugar ½ t butter. Bring to a full rolling boil. Stirring constant
4. add pectin mix. Boil for 1 min.
5. Ladle into hot jars. Leave ¼ in at top. Center lids on jar. Fingertip tighten bands.
6. process jars in boiling water for 10 min. remove jars and cool. Check lids for seal in 24 hrs
