Budding, either T bud or chip method will use a lot less budstick propagation material, as in theory you only need to cut one bud per stick for each rootstock, wheras grafting requires larger peices of budstick ( 2 or more buds) plus some waste when you cut and shape the scions.
You can probably use much thinner budsticks when budding, and these are easier to get off most trees, than thicker sticks you may need for grafting.
That means you can get more buds from the parent tree, and have to chop it back less.
Budding is probably easier and faster, uses less tape per plant, etc.
Grafting requires more skill, but some methods are easier than others.
You also need to tape the graft ,then protect the scion with a plastic bag etc, so more plastic materials are required which increases the expense per tree.
When grafting, by taping and bagging, you may be better able to prevent water affecting the work, wheras in budding rain or irrigation tends to get under the tapes.
