I like the astringent ones because they are sweeter and the birds don't bother them until they start to turn soft. The birds attack the non-astringent ones when they start to turn pink. I can then pick the atringent ones while they are red and hard then wait until they soften, outsmarting the birds. Smart birds here.
My favorite astringent ones are brad sample, honan red, saijo and giombo. I just planted 3 trees in the front, saijo and giombo since I don't have a source for brad sample or honan red budwood. A few years ago I hard a huge saijo tree and then cut it down depending on my large giombo tree. Then I added on to my garage and had to cut down the giombo tree. I'm persimmon deprived now!
