Pruning branches or grafting/budding for shaping ?

I was wondering what the best technique is when it comes to shaping a citrus tree. Grafting/budding, pruning or both ?
E.g. my c. sinensis had a 100% WLD and branch deaths but has recovered quite nicely since the previous summer. Though it will require some shaping but I am doubting how to do it. I already did a bit of pruning with new branches as a result but I don't know if pruning will be enough to create a nice new canopy.
I'll post some pictures of the tree tomorrow to give you guys an idea of my situation but all general information and help is welcome.

I agree about needing help. I love my citrus but most of mine is ugly ! A friend wants me to stake up a 6 year old Owari Satsuma that looks like a weeping willow even without a load of fruit. This is definitely an off year. I put some support under heavy branches last year but I am assuming that some weeping is appropriate in a 6 year old satsuma tree. Tom

Some pictures of my sinensis while in full recovery mode:





As you can see the middle branch is bald at the top part and new branches have sprouted a little bit lower. I pinched of the 2 first branches as you can see clearly in the second picture, creating some new branches.
About these latter ones I am doubting what I should do with them: let them grow higher, making it a main branch OR pinch them of as well to create a shorter branch with some side branches ?
The latter way would let me create more branches but in a couple of years I think I would lag a nice central branch with a nice thickness to it.
