These will melt in your mouth!
Cream together
1 1/2 sticks unsalted butter
1/3 cp. confectioners sugar
Add
1 Tbls. vanilla
lime zest of 1 1/2 limes (2 small) (I used store bought for this)
2 Tbls. lime juice (roll limes first)
Sift together:
1 3/4 cps. flour
2 Tbls cornstarch
1/4 tsp salt
Add to butter mixture -- mix well
Roll into 2 logs (1/2 dollar size diam) in plastic wrap.
Refrigerate 2 hrs.
Slice 1/4 " thin (about 120 cookies)
Bake 12 - 15 min. in preheated 350 oven.
Coat w/ confectioners while still warm .... YUM! |

Patty,
I made these cookies over the weekend, and my wife and girls loved them. They didn't last but a day or so. Thanks for a great recipe.

Thank You! I don't eat sweets very often, but when I make these I can't stop eating them!

Ill definately try them ..

I have 3 ripe yuzus and dont know what to do. So I am thinking to substitute the limes with one Yuzu fruit and have my daughter a go at it! Will let you know. |

Hi Patti,
Okay, today I made a half-batch of the cookies using lemon. I think they are (what's left of them) really good. I plan to do another half-batch using lime next time. I just had a thought - I wonder how they'd be using a mix of lemon & lime? Hmmmmmmm..........may have to try that too . Thanks again for taking time to post that recipe. Stephanie in MD |

Glad you liked them. Hope you measured exactly 1/2 of all... hard to get exact 1/6 cp! I bet you'll like it better with lime, so make a WHOLE batch LOL _________________ Patty

Now that I have 2 persian limes ready to pick, I will make these cookies again. Never made it with fresh picked limes!
