I've been making my own salad dressing for a while since the commercial kind seems to be expensive and homemade is so easy to make. I heard about a vinegar and oil dressing with marmalade so I added some to my usual home built. I really like this stuff.
Changshou kumquat marmalade vinegar and oil salad dressing
1/2 cup good quality sherry vinegar
1/2 cup water
1/2 cup tahini sesame seed paste
1/2 cup kumquat marmalade
1 tablespoon grey pupon mustard
salt, pepper, and spices to taste
2 cups vegetable oil
Makes a pint or so. Actually I make it in batches that match the size of my plastic salad dressing jar.
Sometimes I add about a teaspoon of xanthan gum to thicken it. I ran across this ingrediant when my daughter was diagnosed with celiac disease or gluten intolerance. It is added to gluten free bread recipes for texture and I got my stash on ebay as it is hard to find otherwise.
While I'm at it here is my recipe for "Marie's Brand" Poppy Seed Salad Dressing. My family likes the Marie's brand but at $6 a jar it goes too fast for me.
Poppy Seed Dressing
2 cups corn syrup
3 cups mayo
3 ounces vinegar
2 T poppy seeds
1 ½ tsp xanthan gum
1 ½ cup water
½ tsp citric acid
Makes a couple pints.
