Grafting does not create hybrids. The variety you graft on to a rootstock stays exactly the same variety as it was before. Hopefully it will grow better, because you have used a suitable rootstock for your conditions.
To create hybrids, pollen from one citrus variety must reach the flower of another. If fertilisation takes place, the fruit that forms may contain seeds which will grow to be hybrids of the original two varieties. Often, you cannot tell whether you are growing a hybrid until the plant is mature enough to fruit. So the whole process is likely to take many years. Certainly not a project for the impatient!

Some citrus varieties require pollination, and therefore usually create hybrid seed, but many do not require pollination and the seeds are clones of the mother plant. Therefore, it is much easier to get a hybrid if you start with varieties that require pollination, however, even with pollination it is possible that some of the seedlings will be a clone of the mother tree,

Following up on Skeet's post, even if you do get a hybrid the chances are high that the new tree's fruit will be inferior to the fruit of the parent trees. Lastly, if you are doing oranges, grapefruit you will have to wait for 8-10 years for the tree to mature and produce fruit before you get any results. Mandarins 4-6 year wait. - Millet
