Presently we are picking more limes than we can possibly use, so my wife and I are juicing them, then freezing the juice in ice cube trays. After the juice is frozen, my wife puts the cubes in plastic freezer bags then stores them in the freezer. When she makes a lime pie, lime clustered, limeade, or needs some for fish or salmon patties or for any other reason, she just takes out the number of frozen cubes, needed to make whatever. This way nothing is wasted. The tree supplies enough limes to last us through most of the year. - Millet ,

On that note, and also Key limes, how do you know if they are ripe?

When the Bearss lime's peel starts to produce a little yellowness it is ready to pick. Alternative, you can also wait until the lime turns completely yellow. Completely yellow limes still produce an excellent flavor. I don't grow Key limes.- Millet.

I figured a lime was a lime when it comes to that. I have a ton of key limes sitting there right now and cant figure out when to pick them. Love the ice cube tray idea might use that this weekend.

I do this, too, Millet. I can pop a cube or two of frozen lime juice into whatever I'm cooking, or even use them frozen for blended Margaritas. I freeze them up in trays, pop them out and dump the frozen cubes into a gallon freezer zip lock bag. Takes up less room in my freezer. Super handy. I also will freeze 2 cups of lemon juice into cubes, and put those 2 cups of cubes into separate zip lock bags to make a batch of lemonade (2 cups lemon juice, 4 cups water, 3/4 cup Splenda). Smile
