Today I made my annual ten jars of Seville Orange Marmalade.
A simple process and a delicious result - so much more tangy than anything available in the shops.
Apparently ready-made marmalade sales in the UK are declining, but sales of fresh Seville bitter oranges are going up. They are still widely available here (imported from Spain) but only for about three weeks in January.

I like the taste of (ready made) marmalade, but I dislike the pieces of peel that are in it.

I have never seen Sevilla oranges on the market here. I would love to give them a try though!
What suddenly does show up on our market are Cara Cara navel oranges. I never saw these before either, and now they are available everywhere!

I use an old recipe, in imperial units, for my pressure cooker. You'd have to modify the times a bit if you don't have one, but the basic idea may be useful. I've scanned it and put it on my website at
