Odds on getting variegated citrus from store bought fruits?

Are there some mathmaticals odds on growing variegated citrus from seeds? Furthermore, do the odds change when using store bought fruits for seeds? I know this may seems stupid, but every fruit I eat, I consider trying to grow the seeds and I'm wondering what I face.

Most variegated varieties were discovered as bud sports, not seedlings. From what I have experienced a bud sport has much more stable variegation than seedlings. I have had many seedlings come up looking like they will have great variegation, just to have them revert to green a few weeks later.
