I LOVE preserved lemons, grosly I can eat thrm whole as a snack without putting them in any recipe!

My favourite thing to cook with them though is a Morocan chicken dish with olives and loads of coriander a little ground ginger and saffron. I cut the lemons into quaters and throw LOADS in and gently cook the lot with water or vegetable stock for hours and hours and serve with cous cous which I mix with very finely diced and softened celery and carrots.

I have always eitther bought the lemons or got my mother to preserve them for me though, so know I will have a go myself!

You have great recipes!
