Calamondin Nut Bread

1 C Calamondin puree
1C chopped walnuts
1 1/2 C sugar
2 eggs
1/2 c milk
3 tbsp oil
1 tsp salt
2 1/2 C flour
3 1/2 tsp baking powder
1/4 c golden raisins
1/4 tsp cloves
1/4 tsp ginger
1/2 tsp cinnamon
Process about 12 large calamondins in the blender; use peel and pulp but remove the seeds. Place the puree in a large mixer bowl. Add next 6 ingredients and mix until well blended. Add rest of the ingredients and mix about 1 minute. Pour into greased 9x5x3 inch loaf pan or four small ones, sprinkle top with a little sugar and bake 1 hr and 15 min for the large loaf and about 35 min for the small ones. Test with a toothpick. Cool in the pan 10 min and then turn out on a rack.

Pretty darn tasty!!!

Now that sounds like one for me to try! YUM
My problem is, my cals never get bigger than about 1 inch, so it will take many more than 12 to get 1 cp of puree.

Yup and don't I know it, from the ones Darren sent I got about maybe 3/4 c with adding a bit of water to the blender to keep everything moving.I make a lot of these quick breads and you can just add a bit more milk, no problem! It's very tasty! Very Happy

This sounds really good. At what temperature do you bake the bread?

I'm guessing 350°?
