Well, It looks like I'm sick enough with Citrus fever to actually be interested in ornamentals now. Variegated varieties aside, I hope to acquire a Chinotto (Mrytle leaf) and a Bouqet de Fleur.

What are some other interesting ornamentals? Do the Yuzu or Citron qualify?

All you have listed will qualify. Yuzu is also excellent for the zest. Chinotto has very cool foliage, Bouqet de Fleur has some of the most fragrant blooms and Citron have some of the most fragrant fruit. Citron can be cut in slices and left around the house as air fresheners. They also are a great substitute for lemons in the kitchen.

There is a variegated calomondin (Peters) that works well in a container and, in my opinion, makes the best looking container plant. Procimequat is also a good choice (though not edible), as well as the kumquats, with Nagamia and Mewia my favorites. I would guess Kishu mandarin grafted to flying dragon would be a good choice too.

Ivica, that is a great looking calamondin.

That Calamondin is grafted on Poncirus Trifoliata rootstock.
I have a few small seedlings, all started with branching early except one which grows straight.
